the business shake so explain what a hot sauce my a is does that just mean you you’re good at talking about hot sauces or more than that I think it means a little bit more I don’t call myself a hot sauce Somali oh you don’t know you guys did we do this Oh see we come marketing you take it use it but you are a hot sauce expert yes that’s fair to say okay all right low expectations a little bit now that that’s water so I don’t have to tell you that that’s the stupid thing to have after eating hot sauce but not before get it in first how does one become a hot sauce expert so like with anything to become an expert just doing a lot of it right you’ve tasted hot sauce ten thousand times I read that book ten thousand hours of hot that’s right are these the ones that you want me these aren’t the ones you want to taste though these are the ones we tasted I’m good I’ve tasted a lot of hot sauce ha have you tasted all of these no I haven’t wasted most of these actually hot uses sauce this is some good stuff I’m curious about this yeah try that and tell us tell us about your experience all right and do you want a.m. we want a spoon you use a spoon we have actually specially made little tasting cards that we used a little tasting cards a little more like when you get cologne samples yeah exactly exactly see I could be your partner for the environment business partners for the environment it’s tangy well I don’t need to tell you you need to tell me mmm you sound like an expert yeah it’s a lots of citrus that yuzu bright flavors so that would be really good with a lot of Japanese food I’ll have like deep umami rich intense flavors this’ll cut through so getting contrast between different flavors is a good way to pair things up I really like that the cap yeah it’s like the packaging itself again it’s all about marketing sommelier poppin caps you know and what you you know a connection to our camping your hot sauce oh gosh our good friend Sean from hot ones and so what was your connection with over the world of hot ones so I’ve been working with Sean and atiba hot ones for the last few years to curate the sauces for the show but then also to create oh so we have you to blame for the suffering that we went yeah if you guys had the last tab when you were on yeah that’s that’s oh so you helped formulate that sauce yep so my company is called heat nest and we come up with different flavors and partner with in that case bought pepper company and smoked and Ed who’s in the Guinness Book of World Records in Carolina South Carolina so oh sorry for sorry out of Carolina what are we tasting not these if you want to we pasted them yeah go for the new go for the ones that we haven’t seen this try to read that write some mystery sauce is this homemade yeah it’s always a little questionable when the ingredients are just kind of scribbled on in a pen Josh did you make this one know a guy named Llewellyn on the island of Nevis made it but it is homemade that’s nice not up to any Goods like st. kitts and nevis me point out Nevis on the map yeah you know no yes oh it’s actually made with fermented bananas oh he’s a chef at the Four Seasons down in in Nevis and I had a friend travel there she brought me back this sauce and I think it’s really special it’s really especially you should I’ll try it this one’s used is it used by use or used by me this one’s my use yeah all right fermented bananas oh that’s kind of like a jerk flavor to it I can smell it I can smell the jerk over there in the black oh there’s no stopper on it okay it’s my back yeah those good jerk spices in there fruit there’s a little bit of cinnamon you getting almost a washer that is really good man that’s good you don’t like that sauce that tastes pretty good have you ever had a traumatic experience with hot sauce oh gosh and then not being able to really enjoy hot sauce ever ever since no that would be a problem for a hot sauce expert like so would be a liabilities I mean ever yeah all the time having had the Carolina Reaper and the Trinidad Moruga scorpion and the ghost pepper and all the other crazy good I mean I’ve I’ve I’ve internalized the trauma and there’s certain peppers not all of them that like that that nasty that we in that one that kind of like what we called death what recalled yeah because we experienced it is something that is triggered and something about this no offense to your your island friend but it triggered me man and it I felt like I was gonna vomit it could be the habaneros those can be I really like yeah I bet that’s it that is a it’s in there you’re the expert yeah I think that’s really tasty the complex flavors getting the fruit together with that werster sure savoriness but also the spices of the jerk yeah it’s a good sauce Llewelyn knows what’s up spices of the spices of the jerk I was traumatized one time I had a really really spicy dinner and even for me I was getting up from the table constantly to go get napkins and just like this is very spicy and then something happened that had never happened before I was sleeping in the middle of the night that night and I woke up with an intense pain and all I never had pain from hot sauce and I it was combination of being in the middle of the night and the pain I was thinking what if I did I have a superpower that I’ve now lost and will never have again and I won’t be able to enjoy hot sauce I had a middle-of-the-night panic about oh really but it was just a heart attack yeah but you woke up and you were fine the next day yeah so I thought your career is in jeopardy I thought it was all over what’s that one you thought your whole career was in jeopardy what’s up what are we doing here hey Mexico not eating more odds of us Mexico Lindo black hot sauce let’s take away you ventured in these waters before now Josh do you recommend this yeah that one’s you like use that in my daily civilian life on what on what dishes burritos man you’re a complex man yeah that’s not develop palette that’s enjoying these flavors this is just rated as medium that is it’s not very hot that is also very tasty what does that remind me of so that’s like tell me whatever reminds me of then I’ll tell you you’re right uh Tunisia um that summer in Tunisia another time it reminds me of another type of sauce is not Worcestershire yeah exactly my my father-in-law used to marinate everything in this thing called Dale’s it’s like a already a one very dark marinade called Dale yeah yeah there’s also first three years of my marriage we marinated everything in Dale’s oh you know what I’m talking about oh I actually don’t know what I’m talking about you buddy Dale over but it was kind of a Worcestershire thing yeah what about so there’s there’s a leg row allegro sauce you know about that and then there’s a leg rib which is an allergy yes allegro sauce yes and Dale’s just tastes like a leg roast my wife puts it on yeah she doesn’t London broil yes and she based her London boil in Allegro never heard of it really yeah my wife your teach you a thing you ever heard of a leg it is all you Dale if you want to be marinated wasn’t that can that’s the other bottle next to the yuzu I believe a Guatemalan hot sauce made by McCormick oh so this is like McCormick they make it all it’s named after a Mexican state made in Guatemala by an American company what about Schmidt I think you’re thinking of mcCormick in Schmidt wait the steak has is it different MIT or Schmidt Schmidt Schmidt different the first time we went there when we were like one of our first tryst to Los Angeles we thought that it was just a real fancy restaurant and it was a standalone thing and I saw another why not though ripped off like the Bubba Gump shrimp company well tastes like plastic yeah it tastes like a toy they are using a lot of salt to cover up something oh really yeah that’s not great that’s not great McCormick is Somali yes Somali nope I’m
