Here’s five secrets to make the perfect burrito at home. Secret number one, griddle your tortilla. Tortillas are generally made with hydrogenated oils like lard, which means they’re solid at room temperature. Once you heat ’em up, they melt and get real pliable. Secret number two, add your cheese directly to the tortilla right after you flip it that way the latent heat from the tortilla will start to melt the cheese before any of the ingredients even go on. Secret number three, evenly spread your ingredients across the tortilla, giving yourself an even surface area, and then use your pinkies to tuck and roll. Secret number four, take your burrito and sear it fold side down, that way the steam between the folds is actually gonna hold the tortilla together so nothing’s gonna come apart. Secret number five, tin foil. You’re gonna wrap your burrito in a square of tin foil, that way everything’s steams together, the ingredients get to know each other, and the tortilla becomes nice and soft.
