If you use something like olive oil or even butter, that’s going to burn, before you get all those Maillard reactions from that beautiful sear. Secret number three, gently press the steak into the pan. That way, you’re ensuring that all the surface area is actually touching the pan and getting that nice sear. You’re gonna flip that steak after it gets the nice sear. You’re only gonna let it go for about 30 seconds on this side, and then you’re gonna put it in an oven. Secret number four, pull that bad boy out of the oven when it is 10 degrees under temperature. I’m pulling it at exactly 113 degrees. Straight into secret number five, baste it in butter. Let your steak rest for five minutes.
