Sauerkraut with this flavor profile – [Link] It is sour. – [Rhett] Man, I love sauerkraut. – [Link] I was not ready for that. – [Rhett] This is not necessarily – [Rhett] gonna be a crowd pleaser. – [Rhett] What’s the spicy part in this? – [Trevor] The sweet and sour. – [Rhett] The sweet and sour. Yeah. – [Rhett] So it’s got that sour meets – [Rhett] the sauerkraut. – [Trevor] Yeah. – [Link] I think you’ve done a good thing. – [Link] It’s just sometimes I don’t like good things. – [Trevor] That’s okay. – [Link] Over here, what is this typically? – [Link] And then how has it changed? – [Trevor] Uh, typically – [Link] A beer cheese soup? – [Trevor] Yeah. You start with like a base – [Trevor] of like a chicken broth – [Trevor] and then you add a German beer to it, – [Trevor] you add cream, you make it a thick – [Trevor] like chowdery type of soup. – [Trevor] Add a bunch of cheese. – [Trevor] And so I’ve used a Chinese beer, Tsingtao, – [Trevor] and I’ve added T smoked bacon – [Trevor] and a bunch of Sichuan peppercorns, – [Trevor] three different kinds. – [Trevor] And then there’s also some – [Trevor] chopped up Sichuan peppercorns – [Trevor] on top. – [Rhett] These are both very challenging. – [Link] I know, they’re, yeah. – [Rhett] Like they’re confusing. – [Link] They’re not broad, – [Link] broadly appealing. – [Rhett] It’s strange because you’re taking – [Link] I like that. – [Rhett] You’re taking which is, – [Rhett] you know, was the task. – [Rhett] Which is what makes it interesting. – [Rhett] You’ve taken things that make – [Rhett] these cuisines sort of set them apart – [Rhett] and you’ve taken the things – [Rhett] that set them apart – [Rhett] and brought them together – [Rhett] in a way like I’ve never – [Rhett] when we’ve done these episodes before, – [Rhett] you end up with this flavor combination – [Rhett] that might be, – [Rhett] there’s a point of reference for it. – [Rhett] Neither one of these – [Rhett] have a point of reference. – [Rhett] They’re like completely unique dishes. – [Rhett] No one else is doing this. – [Rhett] I’m like putting that Sichuan, – [Rhett] those peppercorns – [Rhett] with the cheese, – [Trevor] Is your tongue getting a little numb? – [Rhett] Yeah. – [Link] So weird. – [Rhett] So in that region, – [Rhett] they put these peppercorns in there – [Rhett] because it tends to be so spicy. – [Rhett] The food is so spicy – [Rhett] that they want the dead – [Rhett] in your tongue – [Rhett] when you eat the spicy food. – [Link] I like a nice peppercorn. – [Link] That is a thick cheese, man. – [Link] And now, when I breathe. – [Link] Yeah, there’s a numbing, – [Link] chilling effect. – [Link] Wow. – [Rhett] Did you go back to this one – [Rhett] after that one? – [Link] I’m afraid to. – [Rhett] Because I think you’re going to – [Rhett] really like this when you go back to it. – [Link] Oh, you think? – [Link] You’re voting for that? – [Link] It is better after eating the peppercorns. – [Link] That just means I can’t taste it as much. – [Link] Right? – [Link] I’m voting for this one, man.
