Here’s five secrets to make the perfect smash burger at home. Thanks to Kroger for partnering with us. Step one, you want to use a less lean ground beef and you also want a finer grind. The 7030 ground beef from Kroger is perfect. Now, step number two, you want to form your patty on a piece of parchment paper. That way, you’re going to get a good smash without the burger sticking [music] to the spatula. Make sure you season the burger heavily with salt. Step three, you want to use a heavy bottom pan. That way, it’s going to retain a lot of heat and get a good sear. You can use cast iron, you can use stainless steel, but try and avoid nonstick. [music] Now, you can use a burger smasher or you can use two spatulas. One, press down on the other. Then rotate and scrape so the burger gets pressed evenly into the pan. Little bit of neutral oil in the pan. Now, we’re going to drop the burger. Nice press on it. Then rotate. Salt the raw side. And now for the best burger of all time, put some razor thin sliced onions right on top of that. And then you’re going to press those gently into the patty before you flip. All right. Now, we’re going to flip that burger patty. That’s a great sear. Add a piece of cheese and let that melt. Then we’re going to do another patty. Place that first patty on top. Spread some mayonnaise on both sides of a toasted bun. Add a little bit of Dijon mustard for flavor. And of course, it wouldn’t be a smash burger without some pickle chips. Oh boy.
