MK 262: Busting Cupcake Myths (How To Make the BEST Cupcakes)

Do the cupcake Gods reign fiery vengeance upon you and your family, or are they just arbitrary myths pedaled from chef to chef just waiting to be busted. So it’s like a cake, but in a cup. That’s right. Sorry. That was really bothering me. That was a weirdly intimate moment. Thank God. Cause that was weird. First up. Thy say that you gotta sift your flour. Otherwise you’re gonna get lumps. I think that’s so stupid. Oh my God. It doesn’t matter. You just put the flour in. Lumps don’t matter? Look, there’s not gonna be lumps, Lumps matter. But we’re gonna find out if there are. We’re gonna sift the flour versus unsifted flour, then melted butter versus room temp butter. Do you gotta cream the butter together? Or can you just mash all this stuff together? I know what I do. And then we’re going Dutch process cocoa and normal cocoa. There’s two things in the world that I hate more than anything, and that’s one racial intolerance and two the Dutch. And so we’re going to be– That is from Austin Powers I believe. Yeah. That’s thanks for– Michael Caine. Yeah, Michael’s a good, good line. Real original. Anyways, we’re going Dutch processed cocoa versus normal cocoa. And then finally we’re getting into our weird little wild card territory. Some people say you add sour cream to your cakes to make ’em more moister. Some people i.e. myself say dump some mayonnaise in there, when in doubt, mayonnaise it up. And that’s going to be going against buttermilk, which is also our control. And we will be using Duncan Hines creamy frosting on all of them. Also Duncan Hines, can you just imagine if it’s Duncan here, Hines right there, spread nip to nip. Think about it. That’s all I’m saying. In the middle? All right everybody, write down your guesses. Are you’re ready to bust some cupcake myths? Yeah! Vi, I’ve become kind of known as the baking guy around the mythical kitchen, right? I grew up in Idaho, Is that right? I moved out here, that is right, Okay. to go to pastry school. And then I work for one of the best bakers in Los Angeles. And also I love doing my Fortnite dances. What city in Idaho are you from? Meridian? All right, so they say you gotta sift the flour because otherwise you’re going to get a lumpy cake batter. We’ve all seen lumpy cake batter, but we’re gonna see if it actually affects the baking process. So you, we just get to it. Yeah. We’re just gonna just do stuff in pour things in things. I think so, we’re not using a traditional flour sifter here, we’re using what was called a Tammy. This is our girl Tammy right here. Hey Tammy. How you doing? Nice and thick and round. Yeah. Body positive. All right, so just dump that in there. Wait for me, we gotta synchronize our movements. So do you want me to slow down like five notches? Slow down. Vi, I am slow. You have a lot extra steps to do. Be patient with me. I’m slow. I mean, that was pretty quick.. Okay. I’ma just watch you do that, Struggle? Because… But I mean the whole goal of this is trying to see if it can save you time. Yeah. Honestly, this took four seconds, but you gotta buy a $10 thing from the smart and final. All right. So now we’re gonna cream together our butter and sugar. Wait. Aren’t we adding all the dries to that? Fine, Vi we do it your way. Did we skip a whole part? No I’m just gotta make sure. You’re right, you’re right, you’re right. We should whisk the dries together. I’m try to listen to Trevor. Oh, I mean, Josh. Me the baking guy. I am the baker boy. He is the baking boy, my bad. All right. So we’ve added baking soda, baking powder and salt to that. Okay. We’re just gonna go ahead. Give that a nice little whisk. You can’t also, see in my mind, like this sifts the flour. Yeah. If you just whisk the flour, breaks up the lumps, which is what I do, you know what I mean? Aah, it’s like a hit or miss. Sometimes it does, but it depends on how strong your arm is. We’ll see, what cupcake myths do you believe in? That cupcakes should always be vanilla or just cake. Not chocolate. Really? Yeah. I don’t really mess the chocolate cake either. All right, so we’re creaming together the butter and the sugar right now. This is just room temp butter. This is what we’re establishing is our control. Okay. All this stuff, we’re going really classic chocolate cupcake. Make sure, just try and keep everything consistent. We’re gonna mash Yeah. the butter together. I like this part. The sugar. It makes me feel strong. Yeah? Yeah. You’ve been working out. V came in, she was like, I did tire flips this morning and then she kind of hit me a little flex. You know what? That is like the hardest workout. So I’m not, you know. It’s great. You’re getting farm strength. All right. So we’ve creamed together the butter and sugar. Yeah, yeah, yeah. Let’s drop some eggs in here. We’re just gonna start whisking together our wets. And we’re gonna add our wets to our dries. On three. One, two, go. Dang it. Oh, you were off. And vanilla on three. One, two, go. Oil on three. One, two, go. And buttermilk on three. One, two, go. I didn’t say Simon and says, That’s not the game we’re playing. Get in there and start whisking it up. Wait, I don’t like these scoops. Yo we suck man, I’ve never made cupcake before in my life. I’ve made it like once Actually mine’s prettier than his. I’m gonna finger it in, I’m sorry. I’m gonna use the back of my scooper. I’m sorry. No, lemme just, here. What are you doing over here? These are exactly even. How are yours looking? Way better than yours. Is you scoop smaller… My scoop’s a little bit smaller. Yours has been lifting. We’re fine, as long as I finger it in it’ll be fine. Oh my God. You’re ruining your cupcake. We’re fine. When it’s baking it’s going to kill the bacteria. I’m gonna use the back of the scoop. All right. All right. I feel good. Let’s ’em in the oven. All right, so we get the sifted flour and the unsifted flour out. These are some naked cakes we’re just gonna cut into ’em see if we can like tell anything about the crumbs. See if you see any lumps and we got a couple that are frosted with Duncan Hines nip to nip tattoo frosting. You can kind already kind of see difference at the top. Yeah, yeah, yeah. Yeah. The unsifted flours looks like, This already looks a little lumpy. Moister? Yeah, slightly, but it just has a lotta holes in it. It’s kinda got a lot of holes in it. Little air pockets. Let’s open it up. Let’s see the crumb. See the crumb. See if we find any lumps in the unsifted. Do you see it? The sifted flour is definitely more even. Like, you can actually see, It’s smoother. this is like a more homogenous crumb going on right here. Whereas this one, like doesn’t. Seems to have some like pockets in there. And I guess if flour Yeah. It’s like rough. gets clumped up, yeah. You’re gonna get like weird air pockets. I dunno. Let’s try it in the full cupcake version, we’ll see if we can do it. Should we go unsifted first? Yeah, let’s do this. See if we can taste the lumps. Wait, hold on. How do you eat a cupcake? I like to just take the bottom. You leave the wrapper on? Yeah. Yeah. ‘Cause I like it to be clean and not like all crumbly. What is that? Are you making an Oreo? It’s how I eat cupcakes. You gotta take it, doesn’t make any sense. You just get the frosting, no, you make a little sandwich cookie. That’s how do it. I’ve never seen that. It’s a heck of a cupcake. Wow. I don’t think I taste any lumps, but again, my cupcake eating technique is maybe biased ’cause I mash it before I eat it. Yeah, you gotta experience it like a regular person, like a child to actually enjoy it. Yeah. Yeah. I don’t really taste. I don’t taste any lumps. I’m don’t taste any lumps either. But you can see the lumps so it exists for sure. I gotta eat this the same stupid way. You know what? I’m gonna try it. Do it. It’s so convenient. Hold on. You get like a little moon pie. Moon pie. So he let us know just a bit ago, he’s a little camera shy, so he’s not talking, but that sifted flour won. That’s right. Which is correct. Thankfully they chose right. And he actually brought us a couple of bowls of sifted flour too! That’s nice of him. How did he do that with his cardboard arms? What a trip. The next myth that we are munching is melted butter versus just softened room temp butter. Yeah. This is like really interesting because we already have oil, Yeah. as well as butter. So I’m wondering if like the like structural compound of like melted butter’s gonna aid in like any sort of moisture Yeah. or if it’s not? I’m really curious to know ’cause I’ve never done a test this before. Yeah. And I like to cream the butter and sugar together Okay. because it kind of whips air into it and gives you a more fluffy texture and it also breaks up the sugars ’cause you get some clumps with brown sugars and I worry That’s true. that with melted butter, you’re gonna have some of those clumps still, so, Should I just start whisking we will see. Yeah, yeah, yeah. These two together? You can just mix all the wets I think. I can? And I’m cream up. Cool ‘Cause that’s kind of the idea also is that you’re saving time with the melted butter. Got it. You’re no spending as much time. So that’s the point. Whisking up the sugar Nice. and the butter, so. When’s the last time you ate a cupcake? Oh yesterday. I eat a lot of cupcakes. I’m a big sweets guy. Yeah, I’m sure you did. I’m a big sweet girl. I got sweet tooth myself, but I don’t really like frosting. You’re not a, see I’m a frosting connoisseur. That’s like the most important part for me. I actually, whenever I bake cakes, I just use box cake mix. And then I’m like a frosting. Like I’m like I work hard on the frosting. Are eggs considered wet whenever you’re like baking. Yeah. I like to add eggs. I act like I don’t know, and I don’t have my own baking books. So sorry. Yeah. We’re the professional bakers that other guy Trevor over there. He doesn’t know anything about what he’s talking about. Wait, I thought you were Trevor. Get it nice and homogenized, kind of temper in the wets into the dries. Homogenize. Well, let’s compare our batters before we start baking. Mine looks significantly glossier than yours. Yeah. Mine’s got a little bit of clumpage. Little bit of clumpage. Maybe the creaming the sugar isn’t actually as good for it as I thought, I guess. I don’t know, man. We will see. Let’s get these bad boys scooped in. Scoop for you. Thank you. Scoopski. P-p-potatoes. Scoopski potatoes. Wow. Look at our consistencies. There’s actually a difference. Yours seems like a lot more liquid. Mine seems like it has more of like a mass to it, it’s heavier. Yeah. Maybe it’s the fat. Very weird. Could be the fat. Could be the fat. I’m gonna give it a little tap. Okay. All nice and flattened down. And then I guess we just gonna pop these in the oven. Sounds good. The cupcakes are done. Here we are. They’re finished. Let’s take a look. I mean you can tell just straight from the top. Totally. Like looking at it like yours Touch it? looks a little bit more moist. Yeah, touch it. Oh yeah. And this one has a little bit more of a dome to it. This one sunk a little bit more. Yes, sunk, it’s more oily. It’s even more sticky on the top. Yeah. This one has a little bit. This one you gotta kind of fight through, but this one’s just down. It feels moister. Let’s give it a cut. Okay. You go for it. And then I’ll. In half and we can see kind of what the inside looks like. Interesting. Oh wow, yeah. So there’s not, it looks similar. This one looks a little bit denser almost Definitely denser. Yeah. This one has a little bit more fluff. I can see some beautiful fluff and air pocket. Yeah. A little bit nicer of a crumb there. Yeah. But I mean let’s taste it. I wanna taste it. Let’s do it since I don’t like frosting, I’m just gonna do one of these real quick. Yoink! What the heck-a-leck? I don’t like too much. You know? Oh I love frosting. Some people love frosting, I’m not one of those girls. Hmm, yeah. Gimme the meat. See the meat is the frosting for me. Hmm. I’m spoiled. I mean, this is a nice cupcake. This is my job. I’m gonna leave that there. ‘Cause I wanna compare it to this one. Oh my God there’s so much chocolate in my throat. Yeah, let’s do it. Hmm. Oh wow. So the room temp butter, the one with the cream and the sugar. It feels a little bit less dense. It’s a little bit more airy. Sure. It’s a little more fluffy and this one, it just, yeah, it feels, the melted butter feels like it got a little bit denser, But, dense chocolate cake is something that I really enjoy. Like having like that fudgy bite while still being a little bit light is like a really delectable chocolate experience for me. Yeah. So I appreciate the room temperature butter, but for me the melted butter is like, I wanna go back and eat more of the melted butter one. We should let Vi and Josh know. Yeah. You wanna send him a little snail mail? Let’s send him a little snail mail. Right Vi, we got some snail mail. Snail mail? I always throw the card away and I just go right for the snails. I’m let you know right now I’m not eating it. Oh, it’s so bad. Oh no. We have our wet ingredients. Yes. In there. Yeah. Dry ingredients. Oh. I’m like dead inside. Okay. “Suck it up Josh. Be a man” his JV coach screamed at him. Dutch process cocoa. That’s what you have. We’re doing Dutch process versus normal cocoa. Dutch process cocoa it, you know what it is? It’s darker chocolate? Yeah kinda, like kinda a little bit. But what you do is you take normal cocoa powder and you treat it with an alkalizing agent, which de-acidulates it, takes some of the acidity out, Uh huh. Point is, I personally think it tastes better. I add a Dutch processed cocoa to my protein shakes. And then I, yo, one time when I was a kid, I was like, I was really craving some sweet stuff. And so I found cocoa powder in the pantry and I took a spoon full of cocoa powder, ’cause I was like, this taste like chocolate. Did you put milk in your mouth too, hot chocolate? No, that would’ve been smarter than what I did, which is go dry and then I just went as a child and then I learned a lesson. You spit all in everything, right now. Sure did. Sure did. Okay. So we’re gonna add our dry ingredients together. We got all of our baking powder and all of our stuff, sifted together. I’m going normal cocoa powder. I got the Dutch. And then I’m gonna screw it, it’s a little wet. We’re just gonna get that nice little whisk. Okay. What do you think is gonna win? Do you normally, do you go for darker chocolate? I honestly do not like dark chocolate at all. You don’t even like chocolate, right? I don’t like chocolate at all, but I like these cupcakes. I’m not gonna lie, so they get a pass. I feel like if you’re using chocolate, go for the chocolatier chocolate, though. Like that’s where I’m coming from in this. Why though? I don’t know. ‘Cause like, you know, if you’re gonna get wet, you might as well go swimming. That’s a thing. No, you never heard of people just putting their toe in it. Yeah, no, I don’t do that. Put the toe in it. I don’t lounge by the pool with a drink in my hand with my toe in. No, no, no. I put the drink in like a sippy cup and then I submerge myself in water and then I chug under water. That’s just a fun time. That is not good for you. Specially if there’s chlorine in that water. No, I’ve drank so much chlorine in my life, it makes me stronger. All right. We’re gonna add, do this. We got a normal cocoa. We got. Wow. So much chocolate. That just looks infinitely better. Right? Honestly it really does. It looks that looks like a food network cupcake. All right, all right. Let’s, we seen it, we seen it, let’s grab a it’s normal first. Normal, normal. Normal first, yeah, yeah. So we can remember what a normal chocolate taste like. Should we eat this like a normal same human being and not what I do? I’m not gonna lie, I kind of like that. I’m just gonna be myself. We should be ourselves Vi. Okay. That’s the point this. We’re on food network, you have all the execs being like, oh, take princess bites. If you’re a woman, that’s a real thing they said. We’re gonna just start selling this. To the female host of food network. They were like, don’t actually eat like an normal person. Eat like a princess. See if you have a kid, this is perfect. This is real. Food network. What are you talking about? I’m talking crap on food network executives. Oh, okay, we don’t know them. Never gonna get a deal. We gotta edit this out if we ever try to get– Okay, eat your cupcake. All right. That feels great. Make me happy inside. Honestly, I love this. Get a little serotonin and rushed your brain. Go ooh, life’s good. I’m gonna have the wildest sugar rush today Yeah. and I’m not very excited about it. You can get a pump though from the sugar. Been working out. Look at my arm. I have SpongeBob compared to your Larry the lobster arms. I have never seen SpongeBob. I have no idea who these people are. Okay. Try your chocolate This is like so good. deep chocolate. It’s just the guy with his hand up going “Hi.” Myth Munchers, when I was playing basketball at a small Christian high school in Idaho, my coach’s wife gave me the most fantastic recipe for cupcakes that had mayonnaise in it. That’s not true. You’re lying. Yeah. Who the heck is this? I’m Josh. And I’m Trevor. And we’re… Wicked smart. All right. So good out to that bit, bro. We’ve been using buttermilk the whole time, but now we’re gonna see how sour cream and mayonnaise interact with this. But obviously if you’re going to do a sour cream or a Mayo base, you need to change the recipe a little bit. All we did was thin out the sour cream in the mayonnaise to be the exact texture and consistency buttermilk. Smart. So everything should stay nice right? So we start whisking together? Yeah. Yeah. Damn it. I’m never gonna get away from this. No, she’s the cream lady. So in reference to that Nicole, that in a TikTok, I said that I would want to eat Snorlax most, but then in a podcast, I said that if you were a Pokemon, you would be Snorlax. I would? I don’t have no room. You think I’m that lazy? You said that in a podcast about Nicole? She just enjoys leisure. She enjoys leisure time. There are other Pokemon that enjoy leisure. I only know the original 151. I’m the Nicki Minaj looking one, what’s her name? Jinx, Jinx, the Nicki Minaj one is called Jinx, that’s so funny. That the one with the thick hips? Yeah Jinx is thick. The other day me and David went on a walk and then we started making Pokemon noises. And my favorite is which is what Psyduck does when he makes a mistake. Yeah, yeah, yeah, he’s a stupid. That’s his whole thing. No he’s not stupid. he’s a duck but he’s stupid. He’s neuro divergent and a minor, Josh. Okay, Jesus, I’m out, oh no. Sorry I didn’t mean any, I just, you’re not, oh God. All right, so we’re gonna bake these off. Yeah. Sounds like a plan, boss. Remember which ones is which? We’re gonna bake it off. They have tape on. They have labels. Nicole, please do the ceremonial trimming of the cupcakes. Do I have to cut these in four? I’m gonna cut ’em in four. You see you did it without waiting for, what’s the point of asking if you’re not gonna wait for a response? I don’t know. We’re just looking at ’em. I’m trying to engage. I like engaging with you. What do you mean engage? What do you mean? You’re already married, what do you mean engaged? Right. You guys. Got her. Got ’em. You guys are silly. All right, let’s crack ’em open, I’ll look at ’em. So it looks like the Mayo one seems to be the densest. Yeah. Mayo didn’t get a lot of rise outta it. Sour cream seem the lightest y’all? It does. Yes. Interesting. And then Buttermilk’s been our constant, so we already know what that tastes like, what that texture’s like. Well, let’s dig in. I have no guesses. I mean, I like me nice dense chewy cake. Most cupcakes that I make are just protein powder, eggs, Thank you Greek yogurt and peanut butter and they taste terrible. They’re awful. All right. This is mayonnaise. It feels dense. It feels puck like. Yeah, the mayonnaise does. Everybody same time. Same time. Same time eye contact everybody. Why is that so delicious. It doesn’t taste like mayonnaise. Hmm. I taste the mayonnaise and I like it. I don’t know if this makes any sense, but it tastes like a Ralph’s cupcake. Yeah. Are you guys tasting the Ralph’s? Shout out to grocery store cupcakes, ’cause they’re the best. I am really enjoying this. I think the mayonnaise really did something. I think it adds a nice internal wetness Totally. And that’s what I look for. It’s wet. Interesting. It’s interesting. I like moist cake. Should we move on to sour cream? Yeah, yeah. Okay guys. Soured cream. Remember eye contact, constant eye contact. Yeah. It’s called respect. If you separate the eye contact, it’s all for nothing. Okay, cheers. Wait, I got, hold on. Hmm. Nah, garbage. Oh, tastes like beans. I hate this. You love beans. I know but I hate this. You hate this? Why do you hate it? I’m not a fan either, honestly. Reminds me of taco. The mayonnaise is infinitely better. Infinitely better? Yeah. What you talking about. The sour cream’s definitely lighter, but the mayonnaise’s got better taste and it’s more wetter. Interesting. Okay. Okay. Let’s go back. Let’s go revisit our constant here. See if buttermilk was was right all along. Okay now. Hey, you made a butter face joke last time. Are you’re gonna make a buttermilk joke now? I don’t feel comfortable commenting on my female coworker’s milks. All right, together. Dank This is good. Yeah. Is this the best? I think it might be. It might be. This is the best, yeah. I personally have a soft spot for this mayonnaise cake. I will wonder why? Mostly. That’s so good. That was your nickname in high school. That is great. But the mayonnaise makes it noticeably denser. Sour cream might add a little bit of fluffiness. There’s almost a bit of a muted flavor. And here, I think the tang of the buttermilk. I think it’s a happy medium between these two. Yeah, yeah. Me too. I think the sourness in the buttermilk little bit of acidity combined with the Dutch process cocoa, even though it’s meant to take out the acidity that just yields a really, really nice balance. Sour came a little too much dairy going on. The mayonnaise, great flavor, love the wetness. A little dense. I understand why others wouldn’t like that. I’ll bow to your will. Whoo. I am all about the buttermilk baby. Butt milk, butt milk. Butt milk, butt milk, butt milk, butt milk, butt milk, bu– What the..? I’m twerking. Myth Munchers. Sorry. Got a little over excited right there. That makes our winning cupcake sifted flour. Turns out, spend the extra five seconds and sift. What else are you doing with your life? Melted butter. You don’t need to cream the softening. Get the heck outta here. Dutch process cocoa, I take back everything bad I’ve ever said about the Dutch and then, turns out mayonnaise doesn’t really do it for us. Buttermilk, the constant, is way to go. And also Vi drew soccer cleats in honor of the Dutch soccer team. Good job Vi. Weird shaped butt. Is that hairs coming outta the butt? No, it’s a leg. No, that this leg. Oh, I thought they were long butt hairs. Some of us got ’em all butt hairs are beautiful. Trevor what’d you guess? Hi, I’m Trevor and I guess sifted, room temp butter, normal cocoa and butt milk. I got two right. I got sifted. I didn’t get butter. Even though I stand by creaming, I guessed, normal cocoa and then I got buttermilk, so. Trevor stands when he creams. Nicole, what did you get right? Hey baddies. I said sifted, room temp butter, Dutch process cocoa, is it processed or process? Whatever. And then I also said buttermilk. I got three outta four. Wha– Very good score. Very good score. And Vi? My prediction today is sifted flour, room temp butter, uh, normal cocoa, butt milk. I got two. Pretty bad. I also got, I also got two. Unsifted flour, melted butter, Dutch process cocoa and good old fashioned mayonnaise. As always, shout out KNVB Royal Dutch football association next year’s our year boys. And remember that the loser of this season does have to wear the Kirsten Dunce cap. It’s gonna be so humiliating. Humiliation like you’ve never experienced before in your entire lives. Let’s get a score count. In first place we have… Nicole win! But again, we’re not congratulating her. No, congratulations. We only shame the loser. In second place… Not the loser, not the loser! Vi, hold my hand, hold my hand. No. No. Okay, it’s fine. I don’t like to touch either, I just thought maybe it was gonna be a nice moment. And in third place. Wait. No, no. And the loser who wears the Kirsten Dunce cap is both of us. We suck! We gotta make two Kirsten Dunce caps. And what we’ve learned really throughout this entire season of myth munchers is that washing your legs as a myth, you don’t have to do it because when you’re in the shower, here’s the thing. When you’re in the shower, the soap runs down from the gravity and your legs get naturally washed. You don’t have to bend down to take a loofah. Also, if you wake up with a sore back, sometimes it hurts to bend over and wash your legs. And so really what I’m saying is if you use a liquid body wash, then when you’re scrubbing the loofah on the top, the natural curvature, after about 30 to 45 seconds, everything in you is gonna be clean. Don’t even get me started on actually washing your feet. Definitely don’t have to do that one. I have in 29 years never washed my feet, not once. And I don’t emit body odor.
