hey Josh and Lily hold this L buddy [Music] welcome back to mythical kitchen where Nicole and I continually try and one-up each other Nicole do you really think you can make a better chicken sandwich than me oh no question kick your butt as a cynical as a sign of my extreme generosity I will let you pick first you need to pick either one of these highly esteemed cooks really be on your team yeah yeah which one you got I don’t know I’m kind of really into the tall one because my hands are kind of Stuffy and you can like reach you know like cabinets that I can’t reach what about you tall one doesn’t really cook them yeah but I just don’t remember tell them what to do and he like does it and like 80 capacity it’s all right child and you eat salmon cheese sandwiches you take the short one I don’t want the short one you take this one you know why you don’t know why but in the morning she smelled not bad there’s just she just has a smell Josh in the afternoon it goes away so it’s cool but like what is it 10 a.m it’ll go away by like 10 15. I’ll go away in 10 15. yeah you take this romance all right cool Lily you’re on my team yeah let’s go that was really mean what you were saying they heard that at least for a bit I want you to know that I think we actually Foster a really you know cohesive workplace where people feel safe and heard good you do smell good I like your hormonal scent I don’t smell my co-workers you were right about that 70 capacity though it’s a little bit of a musk I like it let’s get cooking I didn’t you don’t smell bad it’s just clearly you’re telling me something I know but I’m saying like surely it’s you can’t smell yourself yes I can no people that’s the thing it’s like you get nose blind anyways we’re making a chicken sandwich today Lily tell them about hainanese chicken and rice so we’re making a hainanese fried chicken sandwich and Heinen chicken is basically a boiled chicken with um scallion ginger garlic all these great aromatics and it’s a very like refreshing dish very clean um but we’re frying at this time and then it’s served alongside of rice which is cooked in this like yellow chicken fat and this chicken is from this chicken called wanchang chicken and it’s known for this yeah beautiful yellow fat Josh what are you doing hyping you up Lily I’m behind you you got it yeah we’re gonna win today um so we’re gonna fry it and make it not very clean and it’s gonna be really good that’s kind of mythical Kitchen in a nutshell taking like a beautiful refined dish and then deep frying it yes so you’re taking the dehydrated scallion Ginger garlic you’re gonna buzz it up into like a dry brine situation yeah we’re gonna brine it overnight overnight but like we’re not gonna stay we’re gonna stay here but like I’ll download all of the Lord of the Rings movies just in case I did I’m gonna cut cucumbers I forgot what I was doing for a second I blacked out but it’s typically served on the rice with like cucumbers on the side and a delicious dipping sauce and so we’re gonna sort of use that inspiration for the Cucumbers I’m gonna take these and slice them on a bias these look Booty Man cucumber Growers of the world I trust that you’re doing your best we’re gonna make them Less in a Bad season you know everybody has bad Seasons Lakers right now doing poorly cucumber Growers also doing poorly don’t know if they’re correlated I’m gonna like slice this on a bias there we go I’m taking inspiration from uh Japanese sukemono pickles on this so we’re gonna try and do like a really heavy dry sugar and uh and salt cure and weigh them down a little bit Lily I’m kind of deciding this little fly bt-dubs I think I missed a part on the spice grinder you know it’s fine it’s fine it’s not screw it in I don’t know I think it’s missing a part when you initially said hainanese chicken rice I thought you said hunannies chicken and I still went with it and then yeah Hunan’s a region in in China oh yeah that’s another dish yeah yeah we’re making that next time we’re just gonna hit all of the hainans and the hunans yeah also for people who watched that video and thought that I I didn’t know that they were different from pools oh yeah there were a lot of pool comments a lot of pool comments okay I I know women’s all right so we’re gonna salt and sugar these pickles and then I’m gonna take my very clean hands and I’m gonna rub this in and then we’re gonna weigh these down yep and then we’re gonna add all of our delicious aromatics the best thing about honey and chicken and rice it looks like a very plain dish but there’s so much flavor hiding inside of it you know it’s like some people look like they’re just very mayonnaise milk toast on the outside but like deep inside they’re super interesting if you just get to know them a little Spice in there somewhere look at how wet the Cucumbers become after you use salt and sugar out of it thank you so no no this is like my favorite pickling technique um you salt it and you sugar it and then you weigh it down and then you add your aromatics yep yeah because that way you get that like all the aromatics the less less cucumber flavor and now I just got it yeah you’re gonna do this for a while you gonna do it for like an hour I know I’ll be here all right did you ever learn this technique in cooking school yeah not quite that but what how do you do it you looked at your bicep I did I did I’m not gonna lie listen I’m a vain man so we’re gonna go a little bit of sambal Olek this is a Indonesian chili paste we’re gonna go Sriracha which is like a Vietnamese American uh incredible success this is an Irwindale style chili paste anybody know Irwindale California you guys great little uh race track out there sounds like in the outskirts it really is actually the Sriracha factory for a while was poisoning the city of Irwindale because it got too popular for its own good and so they’re like we gotta increase production and then all of the chili fumes just like really poison the whole town oh wow um yeah yeah so it’s like from a Vietnamese American dude in Irwindale named after an island in Thailand and now it is like you know completely gone across the entire Globe oh it’s very cool pickles a day has passed the sun has set and now the chicken is brined that looks really fragrant well also looks a bit gangrenous yeah it looks like it grew like a little mold or something which is cool if you go to a restaurant and they’re talking about how they grew mold on their food that’s saying you know it’s fancy that guy in Denmark all he does is he makes moldy reindeer penises and people pay him a thousand dollars yeah yeah yeah yeah all right so you’re gonna you’re gonna fry the chicken up uh tell me about the dredge so I’m adding a little rice flour to a little all-purpose flour to keep like all the ingredients of the original dish in there and then we’re going to add in I’m so smart yeah I know I know like performatively but also based on real life no no no you’re smart too in some way like I’m good at Jeopardy you are really good at Jeopardy like bad at handling like emotional situations yeah if you could have learned more about the hoo-ha I gotta learn more about the who I’ve studied the diagrams but it looks weird to me it always looks like a deer Josh what’s that well Lily I’m so glad you asked this is Lee kumki brand oyster sauce the official oyster sauce of spork.com the official taste testing food ranking website of mythical.com but not mythical.com it’s fork.com they do really good work uh this is also my favorite oyster sauce one of my favorite Pantry Staples to have like quick quick weeknights dinner quick weeknight dinner I’ll take oyster sauce I’ll add it to like cornstarch and water and just go and dump it into a stir fry and it makes it taste good you want me to dump some in there yeah can you please and like oyster is the main ingredient it’s just one of those like Umami things man like you add dehydrated shellfish to anything and it’s gonna taste good tons of cultures around the globe have done it in like America figure it out use more dehydrated fermented shellfish uh do you think that’s enough oyster sauce um yeah I ate the raw egg off my finger what the hell is this good yeah it tastes good right tastes great forbidden goo the idea with the mayonnaise fried chicken sandwiches a lot of people overdo them these days you start stacking cheese and baking all that stuff on them but to me like mayonnaise pickle delicious fried chicken soft bun that’s all you need so we’re gonna try and Infuse flavor in every single side of this I’m taking some of that dehydrated scallion ginger garlic and that’s gonna go well it’s gonna be good and then we’re taking fresh ginger and garlic we’re gonna add that to this we’re gonna hit it with a little bit of Miriam which I know is Japanese and hainanese chicken is well it’s like Fusion Chinese chicken is a fusion it’s like cross culture cultural dishes of Singapore right which has a bunch of cultural influences in it Hainan is a region in China but the dish is also huge in Thailand and Vietnam so like we’re going all around right here uh dropping a little bit of mirin for sweetness that little bit of like you know alcoholic complexity I guess that’s gonna be good and then just a little bit of rice vinegar just to kind of wake it up I’m just going to stir this together and see how it tastes I just double dredged my chicken that’s a great idea did you punch it yeah you got a punch no no this is a real cooking technique that I believe in I did that’s actually one punch it harder I can’t go Rocky four on it not Rocky five that’s they shouldn’t have made that one does that means fights the guy in the street outside of a bar spoiler alert on Rocky five what Rocky five where he fights Tommy the machine gun you know try this aioli yeah I have chicken hands but this is fine yeah go on top it’s good it’s good yeah it’s really nice it’s really pretty I think a little bit of salt a little bit of salt yeah a little bit of salt a little Punch Yeah my tongs what no don’t Tong the chicken no we’re in a fight about this because if you tongue the chicken then you run the risk of the batter falling off you go in there with your bare hands like a like a bear pawing salmon out of the Chinook I don’t care Josh I don’t want to be your partner anymore get out of here if you Lily not now okay we’re almost there we’re only staying together for the kids yeah you know no our chicken is better Lily I know things got a little tense could we just hold it together we got the fried chicken that’s out in two minutes just like we got five minutes we can hold together we don’t want to talk to each other for the rest of the intersections for the rest of the week five minutes just smile or smile the camera they’re gonna cut this and then we’re just gonna foreign tell them about the bow this is sick I got a bun in the oven and it’s right here so we made a homemade bow bun and I think it’s just gonna add a little sweetness to the dish and it’s gonna be really nice yeah you’re gonna get that like nice sweetness which is all the aromatics like super super crispy super salty Fried Chicken yeah oh yeah yeah keep making sound effects for the camera yeah slap it love it okay oh more yeah yeah you do okay put the chicken are you gonna do sound effects yeah I am oh yeah get that chicken on there very good very good oh we all crunchy crunch crunch crunch spicy that’s nice oh cilantro sorry I was gearing up to yell weird stuff again should I put it on there put it on there directly there I feel like here so this way we can sort of like style it towards camera because you’re you’re the real important people here right the judges who eat it we don’t even know their names we don’t even know who they are what’s up Mindy yeah put that crown on yeah yeah right on top yeah oh yeah Daddy that’s what I’m talking about that looks really good actually like not that I was I’m gonna turn it screw you I’m turning towards me look at that man yeah that’s really pretty ah Diggity damn there you have it there’s your hi nannies chicken and rice sandwich minus the rice plus a steed and bow bun with a couple other extra ingredients that’s the official name you’re going down Nicole and Trevor I respect you as chefs but not as people hey Trevor that’s in ugly like someone on that team wasn’t it yeah oh my God it is so ugly we are going to be making a soul hot chicken sandwich we’ll get into that later but for now we’re gonna make all the accoutrements that go on it yes I’m going to be making a scallion yuja Mayo yes and what are you making I am making slaw yeah it’s gonna have uh some daikons some carrots some cabbage and some kimchi yeah and this kimchi is a spork’s favorite brand of store-bought kimchi so you know check it out head over to sport.com if you want to get great recommendations for all kinds of store-bought food like this kimchi it’s pretty good sport I’m a fan of this kimchi the spiciness is there the acidity is there the crunch is there I haven’t eated it it’s pretty good you should give it a little taste I will I will yeah I’m just going to start selling my Mayo so I’m just gonna add some scallions some lemon zest Trevor you want to know a fun fact uh yeah I know how much you love it when I say fun fact did you know that Yuzu juice which is native to Japan is called yuja in Korean you’re kidding me yeah you’re kidding me right now Nicole yeah that’s unbelievable I’ve been really into Yuzu recently you job to be specific I just think it’s a beautiful stunning acidic bright flavor that just livens up any any dish I had a I had an Italian sub sandwich yesterday yeah okay it was about to be like where’s this going I don’t get it and let me just say it was delicious it’s a beautiful bright way to cut all that like fattiness from the chicken yeah I’m really excited to see what that’s gonna taste like I got Korean fish sauce here and I’m really excited oh yeah for the Vietnamese fish sauce yeah yeah yeah it’s much more fish very fishy it is like it’s like pure fish essence essence also about the the long arms things I really meant it yeah no you’re really good at reaching stuff that I my little suburbs just can’t reach yeah I get asked a lot in the kitchen to reach things like pretty much uh anything up here anything Trevor let’s let’s measure our wingspans [Music] isn’t that crazy yeah okay oh wow we’re so in sync okay now forward now let’s do it all again one two three one more time one more time one two three I’m just I’m just making a sauce and he’s making a saw yeah I’m gonna add some some of this kimchi juice directly too good idea um because I’m a bit of a freak uh no you guys right now you have a job to do so no go ahead I think I think you have to do like stuff [Music] done and then you mix it I the I’ve been eating off this fork and thank you yeah I don’t like it when my hands are dirty well Trevor the time has come yes you and I are gonna fry some chicken yeah one more time come on time to fry some eggs last time okay ready yeah time to fry song shake it Trevor I’m going to freaking lose it so that is chicken that has been brined overnight in a bunch of gochujang Buttermilk and garlic and then this is our spice blend now this is inspired by Nashville Hot Chicken which basically what you do is you fry up a chicken you got hot oil and you got your Nashville spice blend and then you toss it you put the spices in the oil toss it and it gets all wet and red and delicious and then you add a little bit of that shake yeah a little shake and so I thought well what if we just did that but with spices that are better yeah um so this one has this one specific quickly purchasing uh pounded like when I see like lb like I don’t think pound I just think oh like like five pieces like a small bag so I bought five pounds five pounds of gochugaru powder yeah that’s this little Bowl here we have five pounds so we’re gonna try to maximize it and use it as much as we can yeah we’re gonna be using this for a while yeah yeah you’re just gonna see random videos with this powder in there I just thought it was funny I wanted to show everyone who wants to embarrass me in the public no I’d not embarrass you I’ve been excited about it I’m glad we have it I’m embarrassed in the public eye well yes it would be the first time am I right what the hell I don’t know it’s okay you’ve been embarrassed before I’m sure you’ve done something embarrassing I embarrass myself you want me to embarrass myself no no no no need no need you do that every day so I’m just gonna take this hair brass yeah it’s a nice thin breast yeah not a big round it’s been pounded yeah yeah you you pouted this no someone else did oh okay got it and then we’re gonna let it hang out like you know I’m so sorry so Josh always talks about craggy bits and how you add a little bit of liquid to get craggy bits he didn’t even do that in his own fried chicken sandwich and neither did Lily and because it’s also her sandwich but she didn’t do it either because I don’t know why losers so we’re gonna we’re gonna do some craggy bits with a little bit of Buttermilk yeah the craggy bits you know they get they get nice and stuck on the chicken they make for a gorgeous yeah you see the crabs yeah yeah I can’t wait to be Josh and Lee Josh and leave I can’t wait to beat Josh and Lily because when we do I’m gonna hit the freaking sickest fortnite gwitty on them I’m literally I’m literally gonna hit the sickest fortnite witty oh your old child masquerading as a 23 year old uh I feel like this is pretty well known do you know the fortnite gritty yeah yeah here I’ve been in the mythical kitchen every day she’s been on Saturday she does great work uh midi before you have two fried chicken sandwiches both alike in dignity uh anyways point is me and Lily made one uh Nicole and Trevor made one and you’re gonna eat Nicole Terrace first do you promise to be an impartial judge in happiness and in health so help you God for sure all right well today we have made for you a soul hot chicken sandwich it’s a take it’s a Korean take on a southern style hot chicken sandwich Nashville hot you have a slaw with kimchi you have a scallion yuja mayo and then you have a beautiful gochugaru fried chicken breast amazing it’s not too spicy it’s it’s quite palatable okay it’s red so I’m a little I’m a little scared but I eat a lot of Korean food okay good on the daily I think my ancestors might be a little excess about that like I have to say if I lose and Trevor hits the fortnite glitty on me I’m quitting my job I can’t come back from that oh my gosh it’s pretty sweet too yeah you’re right not too spicy but like a good a good little kick to it a little heat I want to get some of that that close up oh wait I see a pickle gotta go right in the middle I see your pickle yeah yeah oh yeah big fight oh yeah those big bite sorry um I’m just gonna take this I’m a mess please do that was really good you guys wow okay thank you good start Good Start Lily tell them about it so Mindy this is a hi Denise fried chicken sandwich and we have a beautiful babon homemade that we made just for you we have a ginger garlic aioli we have a chili cucumber and a little cilantro so oh my gosh um it can also be hand smashed tableside for you so your mouth can easily fit around it stop doing thank you no thank you I was kind of worried about my job oh my God compressed it like a chest what it’s so soft I love this texture of like bowel buns so great job with that okay big bite oh my God okay wow it’s really hot I’m gonna make it so we don’t wish hot in terms of temperature yeah yeah that was a lot but that was so good I’ve never had hainanese chicken and rice before but thank you for the gateway to that experience that’s exactly the same as this I think I’m good with one bite for that one because it already gave me all the Vibes that I needed yeah yeah yeah yeah um both of these were amazing I love that they were both Asian inspired because guess what I’m Asian me too so this is big for me me three I’m Persian which is in Asia I am white I read a mango once Mandy we’re gonna give you three two one you’re gonna put your hand over the winning dish and again if it’s Trevor and he hits the fortnite witty on me I’m gonna go berserk I literally count three two one I don’t know it’s like a here you’re like you’re like I don’t understand you’re like hopping around here and then it’s like uh I don’t have it oh they do this it’s kind of a little bunny hop what is this and get Rags well Mindy I understand both sandwiches were me it was the bun because that was just like yeah so original that’s right for yeah for like a chicken sandwich so yeah that’s what that’s what made it for me that’s good that’s a good chicken
