This is the greatest fried chicken dish in the entire world. It’s called pollo chuco, AKA pollo con tajadas, it’s from Honduras, and it all starts with bone-in chicken marinated in mustard, lemon juice, oregano, cumin and chicken bullion. The dish originated in the nation’s capital, Tegucigalpa and it’s traditionally served with bright purple pickled onions and salsa chimol, which is made us tomato, jalapeno, radish and an herb called culantro that I couldn’t find so I just used cilantro. The orgiastic fried chicken fever dream gets served up on a massive pile of fried green plantains, also known as tajadas. You can use the same oil to fry up that chicken in a classic flower dredge, then you plate it all up with marinated cabbage called encurtido, pickled onions, salsa chimol and a heavy smattering of salsa roja and a creamy mayo-y ketchup-y sauce.
